How deals go

The buyer pays into escrow at booking; a big event can be two escrows, a share at booking and the rest before the day. Done is the food served as agreed for the guests expected, and the buyer releases then. A timer to the seller, set past the event, pays for an event served if the buyer goes quiet, and a big event may name an arbiter both trust. Before paying, agree the menu, allergies, staff and clearing up in writing.
